Cornish Caudle Chicken Pie Recipe

15 Gram Butter (1/2 oz)
1 Teaspoon Vegetable oil

Mexican Chicken Cornbread Pie Recipe

I lived in Texas for a couple of years and really got hooked on Mexcian food. When I moved back to North Carolina I began playing around with some Mexican ingredients and ideas. Mexican Cornbread Pie is kind of a mix between traditional Southern cooking and Mexican cooking. It is one of my favourite casserole style dishes.

Here are the things you will need to make Mexican Chicken Cornbread Pie:

1 cup of cornmeal (go a little less rather than heaping)
½ cup plain flour (not self rising)
1 teaspoon of baking powder (not baking soda)
1 cup water
1 egg
2 cups cheddar cheese (about 8 oz.)
1 boiled chicken cooked and torn up in small pieces (or a couple of cans of the cooked chicken)
1 jar of Salsa (I like the hot)

Chicken Pie With A Rice Crust Recipe

There’s nothing like eating chicken and biscuit pie on a cold day to warm up your insides. It’s mum’s comfort food that is always welcome at any mealtime. This dish can be made in about 30 minutes, so you’re not going to need to spend a lot of time in preparation.

125ml olive oil
900g skinless chicken breast fillets, halved horizontally
6 garlic cloves, crushed
2 tablespoons chopped
fresh oregano
2 tablespoons chopped fresh flat-leaf parsley
3 large onions, sliced
450g courgettes, sliced
450g aubergines, thinly sliced

3 beefsteak tomatoes, peeled, quartered and seeded

450ml double cream

Lactose-Free Chicken Pot Pie Recipe

Ingredients:

- 6 skinless chicken breasts ( 1 inch dice )
( or equivalent chicken thighs )
- 3 carrots ( 1/ 2 inch dice )
- 2 medium potatoes ( 1/ 2 inch dice )
- 3 large stalks celery ( 1/ 2 inch dice )
- 2 cups diced onions or 1 cup frozen pearl onions
- 1 cup frozen peas
- 1 liter / quart of chicken stock ( reg or low sodium or homemade )
- 3 TBSP corn starch ( dissolved in 3 TBSP water, make sure there are no lumps )
- 1/ 4 cup oil ( olive, corn canola )
- 4 TBSP melted or clarified butter ( or ghee )
- 1/ 4 TSP dried sage or rosemary ( you choose )
- 1 TSP fresh ground black pepper ( or to taste )
- kosher salt to taste
- 8″ x 12″ casserole dish or pan ( or equivalent )
- 8 sheets of filo dough ( can be substituted with pie crust top and bottom )

Chicken and Leek Pie

Short Crust Pastry

Ingredients -
225g (8oz) Plain Flour
50g (2oz) Lard
50g (2oz) Butter
½ tsp Salt
2 tbsp Cold Water

Note – the type of fat you use for short crust pastry is really up to you. Butter, Lard, Vegetable fat, Margarine, whatever. I remember my grandpa using half butter and half lard, so I stuck to that.
